Shirataki Soup with Red Chili-Garlic Oil

Steeped in flavor this dish will ignite your senses.  Your kitchen will quickly become the gathering place as it fills with the aroma of toasted garlic and hot chili, as complemented by a subtle earthiness from the mushrooms.

I love it when my husband and step-children join me in the kitchen while I cook.  Even if they are just ‘quietly’ working on their homework or a work assignment, I enjoy their company.  This recipe is the perfect way to draw those inquisitive, hungry tummies around the dining table.

The other reason I keep this recipe in my regular meal rotation is the nutritional benefits it offers.  For those of you watching your carbohydrate intake, shirataki pasta* is your answer.  It is a miracle!  Well, at least the brand of shirataki pasta I use is called Miracle Noodle.  The noodle is completely carb-free.

Almost as exciting is the ramen broth.  The slight ginger-mushroom taste adds a depth of flavor to this dish.  The broth, made from responsibly sourced kelp stock, provides an incredible blast of vitamin D.  In fact, 210% of your required daily intake is in one serving of broth.  The brand I use is Ocean’s Halo.  It is organic, GMO-free, vegan, and gluten-free.

*If you are not familiar with shirataki noodles… well then, let me introduce you.. 

Think of shirataki pasta as a ‘guilt-free noodle’.  Naturally low in calories, fat, and carbohydrates, the shirataki noodle is comprised solely from the fibrous konnyaku imo root.   The root is popular in Chinese and Japanese cooking, due to its touted health benefits.  It is known for its ability to help regulate blood sugar, cholesterol, and digestion. 

Further strengthening its’ ‘guilt-free’ status is the konnyaku imo’s association with weight-loss.  Expanding numerous times beyond its original size, once in your stomach, the noodle keeps one feeling fuller longer.  Keep this in mind when you consume the noodle – a little goes a long way!

Ingredients

Red Chili Garlic Oil

  • 4 tbsp olive oil
  • 2 red chilis seeds removed and finely chopped
  • 4 garlic cloves minced

Shirataki Angel Hair Soup

  • 2 cups celery chopped
  • 1 onion medium size, chopped
  • 4 cups ramen broth
  • 1 cup Shirataki Angel Hair Pasta
  • 1 cup spinach
  • 1 cup enoki mushrooms

Garnishes

  • ½ cup green onions chopped
  • ¼ cup sesame seeds
  • 4 pieces Ginger thinly sliced
